  • Is industrially homogenized for consistent texture and appearance.

These processes may diminish the honey’s natural components — such as enzymes, aromatic compounds, and antioxidants. While still legally considered “honey,” its nutritional value and natural integrity may differ significantly from raw honey.

How to Tell the Difference?

  • According to the Turkish Food Codex, flower honey must contain at least 300 mg/kg of proline, a natural amino acid.
  • Levels below this threshold can suggest adulteration or insufficient ripening.
